For the first time, scientist have successfully electrospinned pure starch fibers by using an inexpensive electrospinning device partially using Legos. Legos were chosen because there was going to be water and ethanol in there and they did not want the device to be conductive, so the plastic was a good choice. Starch fiber mats have potential biomedical and food applications, including for lab-grown meat. The research was published in the journal Food Hydrocolloids.
